Pistachios are surging in popularity across the United States as more Americans turn to the ancient green snack for flavor and health benefits. The nuts have moved from traditional markets to mainstream snacks, appearing in chocolate bars, coffee drinks and ice cream as part of a broader shift toward nutrient-dense options. Health professionals say pistachios offer a balanced mix of protein, fiber and heart-healthy fats that fit with contemporary eating patterns. Viome dietitian Janelle Connell said the pistachio moment aligns with a growing preference for foods that deliver flavor without excessive added sugar.

One ounce of pistachios, about 50 kernels, provides roughly 6 grams of plant-based protein and 3 grams of fiber, along with nearly 300 milligrams of potassium—comparable to a small banana. They tend to be lower in total fat than many other nuts while supplying a balanced blend of monounsaturated and polyunsaturated fats.

Beyond fat and protein, pistachios are rich in CoQ10 and vitamin B6, nutrients involved in energy production. Connell noted that pistachios are sometimes recommended for people with signs of low energy production, but they are moderately high in oxalates and may not suit everyone. Cracking shells can slow the pace of eating and support mindful choices, a small behavioral benefit that accompanies the habit of portion control. Portioned intake and individual tolerance matter for those with sensitivity to FODMAPs or oxalates.

To maximize the health benefits, Connell suggested choosing real pistachios in smarter formats: dark chocolate with chopped pistachios, homemade pistachio butter on toast and pistachio energy bites made from dates and oats. The nuts also find culinary appeal in beverages and desserts, such as pistachio-matcha lattes or pistachios sprinkled on Greek yogurt. If pistachios disrupt digestion, other nuts like almonds, walnuts and sunflower seeds can serve as alternatives.

For those watching calories or seeking weight management, pistachios offer built-in portion control thanks to their shells. However, health professionals warn that pistachio candies and chocolates with pistachio flavor can strip away nutrition by adding sugars and extra fats. Connell cautioned that added sugars quickly outweigh the natural benefits and emphasized choosing plain or lightly roasted pistachios whenever possible.

In addition to their fats and protein, pistachios contain antioxidants lutein and zeaxanthin, which support eye health. Historically linked to ancient Persia and mentioned in the Old Testament, pistachios are now a go-to snack for health-conscious Americans. For the biggest payoff, experts advise choosing plain or lightly roasted pistachios and roasting them at home with chili powder, garlic powder or paprika rather than adding sugar.
